I can not find anything about the postage fees on either of these letters.
The first letter is probably from Freiburg to Man(n)heim, as I would read it.

The second letter is addressed to: "Dem Hochwürdigen Wohl Edl Gebohrnen Herrn Josef Balduin (or Gebaldner?) Hochfürstlich Salzburger Pfarrer zu Pusarnitz. Meinen hochgeehrten Herrn a [in] Pusarnitz" (which is the reverend of Pusarnitz).
IN the lower left corner one reads a text about da debt obligation of 1300 Gulden (or Taler) plus 30 Gulden cash money regarding his matter.

The third letter is addressed to "Seiner Wohlgebohren, dem Herrn Appellationsgerichts-Advocaten Seyfried zu Würzburg, nächst der Schule zum Neuen Münster", which means that the letter was sent to Advocate Seyfried at the appellate court of Würzburg, which is next to the Neumünster School". The weight of the letter was probably 24 Loth (see upper left corner) oder 4 Loth. Before the introduction of the metric system in Bavaria, 1 Loth was the equivalent of 17.6 gramme. So the letter's weight was 422 gr., which is quite heavy. It can be explained by the remark in the lower left corner, which reads to me: "Hierzu 1 Rolle Geld mit 15 (Taler?) sig.[ned] H. App.g.advt. Seyfried". That could mean, that the letter contained a role of coins for the mentioned Advocate Seyfried. This is my interpretation.

I do not know the postage of 1819 in Lower Franconia (Hassfurt to Würzburg) for a small packet of 422 gr. But I am sure, that there are some experts around.

Fahrpost means, that the goods were not transported by horses but by stage coaches. Probably this was the case with more heavy items and it took more time.

It is not so easy to read handwriting from the beginning of the 19th century.
My transcription is:
"Wohlgeborenen dem Herrn Zuchtmeister Johan Straich in Manheim" (Adressee)
"Mit einem Packet Gelt von 95 [Taler]49 [Kreuzer]" (Currency depends on year, before 1821 it was Gulden)
.... bei Freiburg gegen einen Postschein." (I could not yet verfy the village near Freiburg, it might be Teningen).

The red number is perhaps the registration number 4.
2/4 loth might be the weight.
